1 medium tomato yields approximately 3/4 cup chopped.
1 large tomato yields 1 cup chopped.
One pound of tomatoes yields approximately 2-1/2 cups of chopped.

Tomato Avocado Toast
Slice avocado and place on toast. Add sliced fresh tomatoes. Sprinkle with salt. Serve.

Season diced tomatoes with lemon juice, olives, minced fresh basil, and minced onion. Drizzle with a tiny amount of olive oil. Serve on endive.
Fresh Tomato Pizza
Top pizza dough with cheese of choice. (Try this vegan cheese sauce.) Top with sliced tomatoes and thinly sliced onions. Bake until onions are golden.
Simple Tomato Salad
